The wines of this area are more than 3000 years old, starting with the Phoenician settlements. In addition to the climate so characteristic of the area, the wines have a unique way of aging and special solera. Thanks to the solera techniques, dynamic aging and time care. Fino wine

This pale, dry-flavored wine comes from the palomino grape, the native grape of the area. This wine is the youngest of all the ones we are going to deal with and it is very versatile. We recommend that you accompany it with starters or tapas such as ham, pork loin, olives, nuts … It is also a good friend of fish, so accompanying it with seafood, anchovies or raw fish, it will be a success. Amontillado wine

This dark wine, drier than the previous one and with more nuances, invites you to make difficult choices. Due to its elaboration, it has the best of the fine wine of the next one that we will see. To accompany this wine with so many details inside, we recommend accompanying it with smoked dishes, cured cheeses, blue fish or spicy dishes. If what you want is that the flavor of the food does not cloud the nuances of the wine, we recommend that you accompany it with white meats.

Oloroso wine

The great nuances of this wine allow the accompaniment to leave us a more lasting aftertaste in the mouth and prolong the sensations. When tasting it you will have memories of hazelnut, oak and aromatic herbs. This wine is perfect to accompany red meats or game meats. It combines perfectly with meat stews or stews, especially bull’s tail. We also recommend that this wine accompany dishes of mushrooms or highly cured cheeses, with great personality.

Cream wine

We leave behind the driest wines and we enter the two main sweet wines of the Jerez winemaking tradition. This wine processed with raisins is velvety in the mouth and throat. It is perfect for people with a sweet tooth and lovers of sweets. For this reason, the classic pairing is desserts and fruit. In addition, cheese is a great ally of this wine, cheeses of all kinds, more or less cured. Staying there, in the desserts, is staying very on the surface of the iceberg. Pedro Ximenez wine

The sweetest wine of this denomination of origin. It is prepared with the grapes of the same name. Contribute a dessert of its own. Few dare to accompany it with a suitable pairing, since it is so sweet and sweet that, many times, it is served alone, to close the stomach.
