Salmorejo, our lovely tomato soup

Andalucía has sunny weather, amazing beaches, and plenty of crops. Imagine being on a white-sand beach in the summertime, you will need something to refresh yourself! Then what’s better than a cold dish on a hot day? Well, the gastronomy of Andalucia has a solution for its weather —— Salmorejo, our lovely tomato soup, tasty, refreshing and healthy!

 

 

In this post, I will show you how to prepare Salmorejo, one of the most typical Andalusian dishes. Also, it’s very easy and quick to make. You could follow this recipe or you can come to Andalucía to taste a real one prepared by a local chef. You will fall in love with our gastronomy and also find out what tapas are meant.

Ingredients
  • 1kg → red tomatoes.
  • 150 gr. → bread with a great crumb.
  • 1 → garlic clove
  • 100 gr → olive oil.
  • A little spoon → salt.
  • Toppings:
    • Egg each person.
    • Iberian ham.
Method
  1. First, we are going to prepare the eggs. Put enough water in a saucepan to cover the eggs and put the fire at a high temperature. When it starts to boil, put the eggs in it. Wait for 12 minutes. After that, let them soak in cold water. This step is very helpful to make it easy to peel it.
  2. Wash the tomatoes, cut them into small pieces, and place them in the blender glass (you can also use a hand mixer or a robot). Blend for a couple of minutes until the mixture is quite homogeneous.
  3. Strain the mixture.
  4. Cut the bread and add it to the mixture. Let it rest for about 10 minutes.
  5. Add the peeled garlic clove and salt to the mixture with the bread and beat it.
  6. While you blend it, gradually incorporate the olive oil. 
  7. Taste it and add salt if you think necessary.
  8. Let it rest in the fridge until it is very cold, at least an hour, although from one day to the next it is even tastier.
  9. Peel the eggs. After, cut eggs and ham as you prefer.
  10. Put the mixture in a bowl and add toppings as you like.
