Alvaro – Alsherry Experiences: Welcome to our interview with Productos la salá, a company specializing in the production and utilization of salicornia, a unique plant harvested from the salt marshes and marshes of Salina la Esperanza. Could you please introduce yourself and tell us a bit about your background?

Susana – Productos la salá:  Certainly. As a marine sciences graduate with a specialization in the agri-food sector, I was involved in the development of the Salicornia yogurt at the University of Cádiz. This innovative product gained significant popularity. However, its production necessitated a substantial investment due to the requirement for an authorized kitchen.

Alvaro – Alsherry Experiences: That’s fascinating. Can you describe what Salicornia is and what makes it unique compared to other halophytes?

Susana – Productos la salá: Certainly. Salicornia is a halophyte, an annual plant that grows in the salt marshes and marshes. It differs from other halophytes, which are perennials, in terms of taste and texture. Salicornia is succulent and has a pleasant taste, while other halophytes tend to be more fibrous and bitter. It germinates in February and reaches its optimum size for harvesting in May or June. Once the cold weather sets in around October, the plant turns red, dries out, and the seeds fall off for the next year’s growth.

Alvaro – Alsherry Experiences: What nutritional benefits does Salicornia offer, and how is it incorporated into various products?

Susana – Productos la salá: Salicornia is rich in water, vitamins (A, D, E, and K), minerals such as magnesium, vegetable proteins, antioxidants, and omega-3 and omega-6 fatty acids. It is an excellent choice for a balanced diet and supports a strong immune system. We utilize Salicornia in various forms. We have a green powder called “green salt” or salicornia salt, which is suitable for people with hypertension due to its low sodium content. We also offer canned salicornia, which is preserved naturally with water and lemon juice. These products allow us to offer Salicornia throughout the year.

Alvaro – Alsherry Experiences: That’s impressive. Could you share some cooking tips or recipes using Salicornia?

Productos la salá: Absolutely. Salicornia is commonly used in traditional dishes here in Cádiz. It pairs well with scrambled eggs, fresh sprouts in salads, or as an ingredient in omelettes. Additionally, we have created several recipes featuring our canned salicornia, such as poke bowls with salmon or stuffed eggs with salicornia. Susana – Productos la salá: Alejandro, the director of Salina la Esperanza, generously provided us with a leased canal and 39 hectares of salt marshes and marsh to harvest Salicornia. This collaboration has been instrumental in our company’s growth and success. It has allowed us to have a reliable and sustainable source of Salicornia, ensuring that we can continue to produce our products year-round. Alejandro’s support and the unique research opportunities provided by Salina la Esperanza have been invaluable to our company.
